Day 1 Lunch: Brussel Sprouts with bacon and dates.  Drizzled with balsamic vinegar.
Chop a few slices of bacon and heat in a frying pan.  Add a handful of sliced pitted dates.  Chop up around 8-10 brussel sprouts.  Separate the leaves, then add to the bacon and dates.  Add 1/4 cup of water to cook the brussel sprouts.  Keep heat medium to high.  Should only take a few minutes to cook since it’s pretty much a stir-fry.  Once finished, turn off the heat and drizzle with balsamic vinegar.
