Day 1 Breakfast:  Paleo Pancakes

1 cup almond flour, 2 eggs, 1/2 cup coconut milk, 1 tsp vanilla, 1/8 tsp cinnamon

* tastes better with fruit like bananas, blueberries, or apples

There are many versions of paleo pancakes, but these were the only ingredients I had available at home this morning.

I topped my pancakes off with organic maple syrup which I’ve discovered is not considered paleo, so I guess this meal fits under Faleo.  This maple syrup comes straight from a tree.  How is that not paleo!?!  I’m not saying it’s good for you.  I’m just sayin’.
