I’ve fallen over a year behind on my updates and much has changed.
Among those many changes, I have switched professions and am currently a Chemistry teacher resident at a high school.  I thought it would be fun to chart my progression over the following year.
As you can see, today is crazy hair day.  The last Friday of every month :)

Day 2 Dinner: Paleo Spaghetti

For the sauce I used, 3 large cloves of garlic, 1/2 onion, box of mushrooms, 1 lb 90% lean ground beef, 1 large tomato, and red pepper tomato sauce.  I had a jar in the kitchen otherwise I would have used regular tomato sauce.

For the spaghetti, I cut 1/2 a spaghetti squash and steamed it for 30 minutes.  I used a fork to pull out the squash strands.  They really do look very similar to spaghetti.

The spaghetti squash had a crunchy consistency that I wasn’t quite used to, but I’m sure after a few gos it won’t feel so new.

Day 2 Breakfast: Banana Paleo Pancakes
I used leftover pancake mix from Day 1.  Topped pancakes with banana slices before flipping.  I should have pressed the bananas in a little more to make the pancakes look prettier, but oh well.  I drizzled coconut milk over the pancake mix.
I just got a call from the Tamster.  Instead of a morning run, we’ll be doing bikram yoga.  Hope my breakfast stays down.  I usually avoid eating 4 hours before bikram yoga, probably one of the reasons I haven’t gone in a year or two.

For the 4th of July weekend, I went with my friend Faralyn to stay with the Ruckers - a classic American family with lots of love, laughter, and toys (Laughlin, AZ.)
Here’s a picture of me shooting one of their .22 rifles.  My aim was surprisingly accurate especially since I’m near sighted and wasn’t wearing my glasses.  Squinting is key.

Day 1 Dinner: Salmon and Cucumbers
Pan-seared fresh sock-eyed salmon with skin still on and a dash of olive oil.  Added dill and sea salt for seasoning.  Squeezed lemon juice for extra flavor.
Peeled and cut 1/2 cucumber.  Topped with lemon juice, red pepper, and sea salt

Day 1 Lunch: Brussel Sprouts with bacon and dates.  Drizzled with balsamic vinegar.
Chop a few slices of bacon and heat in a frying pan.  Add a handful of sliced pitted dates.  Chop up around 8-10 brussel sprouts.  Separate the leaves, then add to the bacon and dates.  Add 1/4 cup of water to cook the brussel sprouts.  Keep heat medium to high.  Should only take a few minutes to cook since it’s pretty much a stir-fry.  Once finished, turn off the heat and drizzle with balsamic vinegar.

Day 1 Breakfast:  Paleo Pancakes

1 cup almond flour, 2 eggs, 1/2 cup coconut milk, 1 tsp vanilla, 1/8 tsp cinnamon

* tastes better with fruit like bananas, blueberries, or apples

There are many versions of paleo pancakes, but these were the only ingredients I had available at home this morning.

I topped my pancakes off with organic maple syrup which I’ve discovered is not considered paleo, so I guess this meal fits under Faleo.  This maple syrup comes straight from a tree.  How is that not paleo!?!  I’m not saying it’s good for you.  I’m just sayin’.
